Onggi Fermentation Crock

My friends at Onggi Ferments in Portland, Maine contracted me to design their custom fermentation crock. This crock uses the ancient fermentation mechanism of a water seal. Simply adding water in the rim will keep air out of the crock and keep your ferments healthy. It also creates a natural “burp” so you don’t have to worry about ferments exploding under pressure.

I designed the shape to be a simple, yet modern form that would look great on your countertop. Once we were happy with the shape, we had it 3D printed, which was then molded into a plaster mold.

I was also responsible for designing these earthenware fermentation weights. Designed to fit in the Onggi Crock and ball jars to hold down your ferments.
